Baked Vegetarian Ravioli

This recipe of Baked Ravioli is super easy to prepare and it’s an easy make ahead recipe. It’s made with marinara sauce, roasted vegetables, ravioli baked with cheese and flavorful seasonings.

Ingredients

  • 9 oz. ravioli
  • 1 tbsp olive oil
  • 1 -1 ½ cup vegetables onions, broccoli, bell peppers, zucchini
  • ½ tsp chili flakes
  • Salt to taste
  • 1 tsp Italian seasonings
  • 1 1/4 cup marinara sauce
  • 1 1/4 cup mozzarella cheese
  • ¼ cup pecorino Romano
  • Fresh basil or some Basil pesto

Instructions

  • In a pan or skillet on medium heat add olive oil, once it heats up add vegetables and sauté them until slightly tender and cooked. Add seasonings and salt.
  • Spread half of the sauce on the bottom of the pan 9 X 13-inch baking pan. Layer it with half of the ravioli in one layer. Add vegetables, some sauce and cheese and repeat with remaining raviolis, sauce, veggies, and cheese.
  • Cover with a foil, bake at 350 F for 35 minutes and then remove the foil and bake it for another 5-7 minutes.
  • Remove and serve with some freshly chopped basil or basil pesto on top.
