Wash cherries and remove the pits with the help of cherry pitter. Roughly chop them.
Take pitted, chopped cherries in a pan, along with water and sugar. And, cook it until cherries breakdown and turn into jammy consistency on medium heat. It will take about 15- 20 minutes.
Keep stirring in between. You can add some more water if you feel like its sticking.
The more water you add, the longer you will be cooking it to reduce the water.
Once, it looks thick consistency, remove it from the heat. Let it cool down.
Meanwhile it is cooling, take chia seeds in a medium sized bowl or two small jars.
Add milk and honey, pinch of salt.
Salt is totally optional. But I like that slight taste of salt in my sweet breakfasts or desserts.
Stir it to mix the chia seeds to the milk. Leave it aside for at least 4 hours or longer until chia seeds have doubled in size and the mix looks thickened.
It should have pudding like texture. Once, it is ready add the cherry compote and serve it.
You can add other flavorings too- vanilla/almond extract, cinnamon, cardamom etc. I kept it simple.
