Greek Salad Hummus Flatbread

Ready in no time, this Greek Salad Hummus Flatbread is a tasty vegetarian lunch (or appetizer) that’s great to serve at gatherings.

Ingredients

Flatbread

  • 2 ½ cup all-purpose flour
  • 1 cup lukewarm water 110 F
  • 1 ½ tsp yeast
  • 1 tbsp sugar
  • 1 tsp salt

Greek Salad

  • 1 cucumber chopped
  • 1 small- medium onion chopped
  • 1 medium green or red bell pepper or mix
  • 2 medium sized tomatoes chopped
  • 1/3 cup approx. olives
  • 1/2 tsp Greek seasoning or oregano
  • ¼ tsp black pepper
  • ½ tsp salt
  • 2 tbsp olive oil
  • 2 tsp red wine vinegar or lemon juice
  • 1/3 cup feta cheese

Instructions

Flatbread

  • Take all ingredients of the flatbread and add lukewarm water and make a dough using stand mixer or with hands. Lightly oil the bowl and dough and let it rest covered in a warm place.
  • Let it rest for two hours (covered)or until doubled in size. Once it is doubled, you can rest it overnight in the fridge or make the flatbreads immediately.
  • Divide the dough into equal parts. You can easily do three parts. Make dough balls and let them rest covered for another 20-30 mins.
  • Once ready, roll out dough into desired shape round or squarish. Punch dough in the middle with fork and bake at 450 F for about 7-9 mins. If you want it softer you can remove it earlier. For this recipe, I prefer slightly firm bread.
  • Preheat the oven to 450°F. Brush each side of the flatbread with light oil, place on an ungreased sheet pan.
  • Bake the flatbread until the edges are crisp, about 7 to 8 minutes. Cool slightly before adding toppings.
  • Meanwhile, dress the salad in a bowl. Add 2 teaspoons of vinegar or lemon juice and 1/2 teaspoon of seasoning and 2 tbsp olive oil. Stir well to combine. Add feta cheese.
  • To assemble: spread the hummus evenly over the flatbread and top with the chopped vegetable salad (gently press them into the hummus so they stay put). Then, sprinkle with extra fresh oregano, mint, or any other herb of your choice. Drizzle garlic sauce or any other sauce you will be adding on top. Cut into pieces and serve!
  • You can also add some green like arugula of you wish.
