Lemon Blondies

Sweet, moist, lemon blondies are easy to make and glazed to perfection. Right amount of sweetness and tanginess. This recipe is a crowd pleaser and irresistible.

Ingredients

Blondie Batter

  • ½ cup unsalted melted butter
  • ½ cup granulated white sugar
  • ½ cup confectioner sugar
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
  • 2 tbsp lemon juice
  • 2 tbsp lemon zest from 2 lemons
  • 1 ¼ cup All-purpose flour
  • ¼ tsp salt
  • ¼ tsp baking powder

Glaze or Icing

  • 1 Cup Confectioners’ Sugar
  • 2 tbsp lemon juice
  • 1 tbsp lemon zest

Instructions

Make Batter

  • Preheat the oven to 350°F (180°C)
  • Butter or spray an 8-inch square baking pan lined with parchment paper.
  • Mix the dry ingredients – flour, salt and baking powder and give it a whisk or stir. Leave it aside.
  • Melt butter either in microwave or stove top in a pan or butter warmer. Let it cool slightly, but still liquidy add both sugar (granulated white sugar and confectioners’ sugar) one by one and whisk or if you are using a mixer, let it mix for 1 minute.
  • Add eggs and vanilla extract, followed by lemon juice and zest. Whisk everything until it looks homogenous.
  • Add the dry ingredients into wet mix and using a spatula, mix everything well. The batter will be thick. Do not over mix it, make sure dry ingredients are mixed well.
  • Transfer batter to prepared baking pan. Make sure to even out the batter in the pan.
  • Bake for 15 minutes and at 350 F.

Make Glaze

  • Once baked, let them cool down a bit, like for 8-10 minutes. Meanwhile, make glaze. Mix all the ingredients of the glaze and give it a whisk or stir. If its too thick, you can add a tbsp extra lemon juice or milk. Just enough to make glaze pourable but not too liquidy.
  • Pour glaze and using an offset spatula or spoon, just spread the glaze evenly. If you like you can sprinkle some more of lemon zest.
  • Once the glaze is set, remove the blondies with the help of parchment paper and cut it into squares.
  • I glazed it in the pan itself and let the glaze set completely before making squares.

Notes

 
  • If you want you can totally, add some limoncello into the glaze to make them more fun. I know you want to.
