PassionFruit Yogurt Barks

Easy and healthy snack made from yogurt, passionfruit and nuts. Perfect snack for kids and adults for summer heat.

Ingredients

  • 1 cup plain yogurt thick
  • 1 tbsp honey
  • ½ tsp vanilla extract
  • 2-3 tbsp fruit puree
  • 1/8 tsp salt optional
  • Toppings - Fruit, Nuts, Cacao nibs, goji berries, sprinkles etc.

Instructions

  • Take yogurt and all the other ingredients in a mixing bowl. Whisk until its smooth.
  • Pour this yogurt mix on a parchment lined tray. They should be ¼ inch. Use smaller tray that way, it won’t spread too much. The thinner the yogurt is spread out, the thinner these barks would be.
  • Sprinkle toppings of your choice.
  • Freeze it overnight or at least 6-7 hours until it firms up and becomes frozen.
  • Remove and cut into pieces. You can use a knife or just randomly cut pieces with hand.
  • Serve them frozen.
  • Store it in a tight container in the frozen.

Notes

  • If you are using whole fruits, use a blender to mix them into yogurt instead of whisking.
  • If you do not want to add fruit purees, then ad whole berries on top. I can think of so many combinations mangoes and coconut, summer berries etc.
  • Make them ¼ thicker, so they do not melt easily.
