Instructions
Keep a pot of water boiling, add in the cauliflower florets and let them boil until they are barely soft exactly about 3 minutes. Please use a timer so you do not over cook them.
Strain the water and run cold water to stop them from cooking further. Leave it aside.
Take flour and corn starch in a mixing bowl, add other dry spices. Stir to mix and add about ¼ cup water. Mix it well. Keep the batter thick, more like pancake batter. Not too thin nor too thick. Cauliflower florets should be able to coat in the batter.
Take oil in a deep pan on medium heat. Once the oil is hot, dip each cauliflower florets into the batter and fry them in batches.
Remove them on an absorbent paper.
To assemble tacos – Warm the tortilla directly on the flame using tongs, place cauliflower florets, add pico de gallo, cheese, sauces of your choice.
