Apple Crumb Cake

Ingredients

Cake Batter

  • 1 1/2 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/3 cup milk
  • 1 teaspoon vanilla extract
  • 6 tbsp butter melted
  • 2 large eggs
  • 2 to 3 medium apples washed peeled, cored and chopped (I used Red Delicious)
  • 2 Tablespoons granulated sugar
  • 1 teaspoon ground cinnamon

Crumb topping

  • 1/2 cup all-purpose flour
  • 1/4 cup sugar
  • 1/2 cup unsalted butter melted and cooled
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • ½ cup pecans roughly chopped

Instructions

Crumb Topping

  • Preheat your oven to 350 degrees F. Grease and flour a 9-inch square baking pan.
  • Prepare your crumb topping by stirring together the flour, sugar, cinnamon, and salt in a medium bowl. Drizzle this mixture with the melted butter. Toss together with a fork to combine, fluff with fork until mixtures creates crumbs. Set aside.

Cake Batter

  • In a medium mixing bowl, whisk together flour, sugar, baking powder, baking soda and salt. In a large measuring cup, mix together milk, vanilla, butter and eggs. Whisk until smooth.
  • Add the wet ingredients to the dry ingredients and stir with a wooden spoon. Do not over mix. Few lumps in the batter are okay.
  • Pour the cake batter into the prepared pan.
  • In a medium bowl, toss together apple slices with two tablespoons of sugar, 1/2 teaspoon of cinnamon. Set aside.
  • Arrange apple slices over the batter.
  • Sprinkle crumb topping over the apples covering completely. Add chopped pecans too.
  • Bake the cake for 40 to 45 minutes or until the topping is golden brown.
  • Let cool completely in the pan.
  • Transfer onto a wire rack. Slice and serve.
  • Keep in a covered container for up to 4 days.

Notes

  • Use any sweet or tart apples but firm. 
  • leftovers can be stored in a tight container.
