Ingredients
Cake Batter
1 1/2cupall-purpose flour
3/4cupgranulated sugar
1teaspoonbaking powder
1/4teaspoonbaking soda
1/8teaspoonsalt
1/3cupmilk
1teaspoonvanilla extract
6tbspbuttermelted
2large eggs
2 to 3medium apples washedpeeled, cored and chopped (I used Red Delicious)
2Tablespoonsgranulated sugar
1teaspoonground cinnamon
Crumb topping
1/2cupall-purpose flour
1/4cupsugar
1/2cupunsalted butter melted and cooled
1teaspoonground cinnamon
1/2teaspoonsalt
½cuppecansroughly chopped
Instructions
Crumb Topping
Preheat your oven to 350 degrees F. Grease and flour a 9-inch square baking pan.
Prepare your crumb topping by stirring together the flour, sugar, cinnamon, and salt in a medium bowl. Drizzle this mixture with the melted butter. Toss together with a fork to combine, fluff with fork until mixtures creates crumbs. Set aside.
Cake Batter
In a medium mixing bowl, whisk together flour, sugar, baking powder, baking soda and salt. In a large measuring cup, mix together milk, vanilla, butter and eggs. Whisk until smooth.
Add the wet ingredients to the dry ingredients and stir with a wooden spoon. Do not over mix. Few lumps in the batter are okay.
Pour the cake batter into the prepared pan.
In a medium bowl, toss together apple slices with two tablespoons of sugar, 1/2 teaspoon of cinnamon. Set aside.
Arrange apple slices over the batter.
Sprinkle crumb topping over the apples covering completely. Add chopped pecans too.
Bake the cake for 40 to 45 minutes or until the topping is golden brown.
