Apple Crumb Cake

The most delicious apple cake for morning breakfast or serve it as dessert. What is the best part of a crumb cake? Crumb topping! I disliked crumb cake for so long, until I tried a coffee crumb cake and start liking it. Do often like a crumb cake and just wish there was less cake in it and more of the crumb topping. This one is right in between. Perfect for all the apple picking you did recently.

You can taste the apples; the cinnamon and pecans add a nice crunch. Before arranging the apple slices over the batter, I toss them gently in sugar, cinnamon. It helps them cook perfectly between the layers of the cake and the topping and has flavor of cinnamon. Once the apples are arranged, sprinkle crumb topping on top and bake away!

Three steps to make Apple Crumb Cake

  • Make the crumb topping. Combine all ingredients in a bowl and stir with a fork until it resembles crumbs. Set aside.
  • Prepare the apple layer, by slicing apples and tossing them with lemon juice (to prevent browning) and spices.
  • Make the cake batter and pour into a cake pan.

Notes

  • Use any sweet or tart apples but firm. 
  • leftovers can be stored in a tight container.

Ingredients

Cake Batter

  • 1 1/2 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/3 cup milk
  • 1 teaspoon vanilla extract
  • 6 tbsp butter melted
  • 2 large eggs
  • 2 to 3 medium apples washed peeled, cored and chopped (I used Red Delicious)
  • 2 Tablespoons granulated sugar
  • 1 teaspoon ground cinnamon

Crumb topping

  • 1/2 cup all-purpose flour
  • 1/4 cup sugar
  • 1/2 cup unsalted butter melted and cooled
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • ½ cup pecans roughly chopped

Instructions

Crumb Topping

  • Preheat your oven to 350 degrees F. Grease and flour a 9-inch square baking pan.
  • Prepare your crumb topping by stirring together the flour, sugar, cinnamon, and salt in a medium bowl. Drizzle this mixture with the melted butter. Toss together with a fork to combine, fluff with fork until mixtures creates crumbs. Set aside.

Cake Batter

  • In a medium mixing bowl, whisk together flour, sugar, baking powder, baking soda and salt. In a large measuring cup, mix together milk, vanilla, butter and eggs. Whisk until smooth.
  • Add the wet ingredients to the dry ingredients and stir with a wooden spoon. Do not over mix. Few lumps in the batter are okay.
  • Pour the cake batter into the prepared pan.
  • In a medium bowl, toss together apple slices with two tablespoons of sugar, 1/2 teaspoon of cinnamon. Set aside.
  • Arrange apple slices over the batter.
  • Sprinkle crumb topping over the apples covering completely. Add chopped pecans too.
  • Bake the cake for 40 to 45 minutes or until the topping is golden brown.
  • Let cool completely in the pan.
  • Transfer onto a wire rack. Slice and serve.
  • Keep in a covered container for up to 4 days.
