¾cupmilk + 1 tbsp apple cider vinegarleave it aside
1cupgranulated sugar
1cupmashed overripe Bananas (2-3 bananas)
¾cupneutral oil
1tspvanilla extract
½cupnuts
½cupchocolate chips
Instructions
Pre-hear oven to 350F. Grease the loaf tin with baking spray and line it with a parchment paper.
In a bowl, add flour, salt, baking soda and give it a stir. Leave it aside.
In another mixing bowl, mash bananas, add oil, vanilla extract, milk which was curdled using vinegar and sugar. Give a good mix using a whisk or spatula. Make sure the mixture looks homogenous and not separated.
Add flour and mix it well. Followed by chocolate chips and nuts If you are using them.
Pour the mix into the loaf pan, bake it at 350 F for about 60-70 mins or until a toothpick inserted into the center comes out clean.
One baked, let it cool for 10 mins and then remove it to cool completely on a wire rack.
Serve it with some butter, Nutella or crème fraiche.
Notes
Use over ripe bananas for best flavor.
I have used 1 cup sugar, but if you like it to be sweeter add ½ cup extra so add 1 ½ cups. I do not like overly sweet bread. Bananas also have sweetness.
