Eggless Banana Bread – best banana bread

An easy eggless and soft Banana bread recipe that’s full of bananas, of course and lots of chocolate chips, walnuts.

If you always end up with over ripe bananas, and no one wants to eat them, do not throw them away. Make Banana bread.

This recipe is adapted from my favorite banana bread. I heard about Julia’s Banana Bread and tried making it. It was one of the best tasting breads. We loved it so much, that I never looked to another recipe.

After making it at home several times, when we went to Maui few years ago. I had to go try this Banana Bread from Julia’s shack. We drove all the way on that crazy risky highway, to get to her shack and bought a loaf.

It was still slightly warm and freshly baked; you know how I know because first thing I did was open that loaf and take a bite. Julia was not at the shack, but her daughter-in-law was there.

We also tried to a test taste another banana bread from the island.

I have always baked this bread with eggs, but this time I wanted to experiment without eggs and see how well it bakes. It came out so perfect. Every time I make this bread, everyone loves it at my workplace.

It’s simple recipe to make, does not need a lot of utensils and best way to use overripe bananas so they are not wasted. It can be served for breakfast or make it into dessert with ice cream or crème fraiche. You can even make some cream cheese frosting and enjoy it.

This is easy to convert into muffins too. This loaf makes perfect hostess gift for dinner parties or holidays.

The ingredients for this bread are simple – flour, sugar, salt, baking soda, oil, milk, vanilla extract, and the main ingredient bananas. Additionally, I also love to add chocolate chips and walnuts. However, they are optional.

Just in case, if you have over ripe bananas and do not want to bake bread, you can also freeze them. Just freeze them un-peeled in a freezer safe Ziploc bag.  You do not even need to thaw them. They soften up easily.

Same way, you can freeze whole loaf of baked banana bread too.

Ingredients

  • 1 ¾ cup All-purpose flour
  • 1 ½ tsp baking soda
  • ¾ tsp salt
  • ¾ cup milk + 1 tbsp apple cider vinegar leave it aside
  • 1 cup granulated sugar
  • 1 cup mashed overripe Bananas (2-3 bananas)
  • ¾ cup neutral oil
  • 1 tsp vanilla extract
  • ½ cup nuts
  • ½ cup chocolate chips

Instructions

  • Pre-hear oven to 350F. Grease the loaf tin with baking spray and line it with a parchment paper.
  • In a bowl, add flour, salt, baking soda and give it a stir. Leave it aside.
  • In another mixing bowl, mash bananas, add oil, vanilla extract, milk which was curdled using vinegar and sugar. Give a good mix using a whisk or spatula. Make sure the mixture looks homogenous and not separated.
  • Add flour and mix it well. Followed by chocolate chips and nuts If you are using them.
  • Pour the mix into the loaf pan, bake it at 350 F for about 60-70 mins or until a toothpick inserted into the center comes out clean.
  • One baked, let it cool for 10 mins and then remove it to cool completely on a wire rack.
  • Serve it with some butter, Nutella or crème fraiche.

Notes

  • Use over ripe bananas for best flavor.
  • I have used 1 cup sugar, but if you like it to be sweeter add ½ cup extra so add 1 ½ cups. I do not like overly sweet bread. Bananas also have sweetness.
