Brie, Cranberry and Caramelized Onion Bites

These Brie Cranberry Bites are so fabulously festive. They are super easy and need few ingredients. I tried phyllo cheese bites in Bahamas on one of my trips. I loved it so much. After my first bite, I did not even want to share with my husband. 😉

Melty pieces of brie, caramelized onions, cranberry sauce, rosemary, walnuts tucked inside the layered phyllo sheets converted to cups are festive and tiny little hor’ oeuvres. Everyone loves them at any gathering you make.  

Whether you are entertaining or going to someone’s else place, these are easy to impress. Everyone loves cheese. Phyllo sheets are so crispy.

Brie Bites

Phyllo Sheets – Two things I love to use during holidays 1. Phyllo sheet and 2. Puff Pastry Sheets. Both have different type of texture but taste great and easily found at your local grocery store in the frozen section.   

Brie Cheese – If you have never tried Brie cheese, you need to make this recipe immediately. Brie cheese is soft and creamy cheese. I often serve it on my cheese board or baked it for few minutes to make melty and gooey.

Caramelized onions – Caramelizing onions is an easy as it is in small quantity. While the phyllo sheets are thawing at room temperature you can make cranberry sauce and caramelized onions. They add so much extra flavor to these bites.

Cranberry Sauce – It’s perfect during holidays as it is readily available. I love the combination of the sweet cranberry sauce with the creamy Brie cheese. Cranberry sauce come together in no time. Do you know, I use cranberry sauce in place of tamarind chutney in Indian recipes? So, I make it regardless of this dish.

Walnuts – The walnuts add a nice crunch. If you are allergic, leave them out.

Rosemary – A sprig of fresh rosemary is delicious, but I used dried rosemary. Use whatever you have access to. Thyme would also taste good.

Baked Brie Bites in phyllo cups are the ultimate easy holiday appetizer to impress your guests! These are made with phyllo cups, Brie cheese, cranberry, caramelized onions.

Ingredients

  • 2 tbsp oil
  • 1 onion sliced
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 4 Phyllo Sheets – 14”x18” thawed
  • 1/2 cup butter
  • 4 -6 ounces Brie cheese
  • 1/2 cup Cranberry sauce
  • ¼ cup walnuts roughly chopped
  • 2 tbsp rosemary

Instructions

  • Heat up a pan on medium flame with some oil, add the sliced onions and season it with some salt. Saute them until they are browned and turn caramelized in color. Splash the pan with water if they are burning rather than cooking. Slow cooking will ensure the onions do not burn. Once they are done leave them on a side.
  • Pre-heat oven to 350 F.
  • Thaw phyllo sheets as per the package instructions. Take one phyllo sheet, lightly brush it with butter. Layer another one and repeat the process until you stack 4 layers of phyllo sheets. In between every phyllo sheet you need to butter well enough or else it will turn out dry.
  • Using a pizza cutter or a knife, cut them into equal number of squares. You should be able to get 4” x 4” 12 squares. Fan them out. Arrange them in star shape. Tuck this into muffin pan. Place a cube of brie cheese, top it off with 1/4 tsp caramelized onions, walnuts, rosemary, and 1 tsp cranberry sauce.
  • Place the muffin pan in the oven and bake them for about 10-15 minutes. Bake them until golden brown, cheese is melty and bubbling. Let them cool off in the pan and then remove them.
  • Serve them either immediately or later.

Notes

You can use store-bought phyllo cups too. They look slightly different than these.
