Coconut pound cake

Do you love pound cakes? Then you will definitely love this coconut flavored pound cake. It is moist, full of coconut and buttery delicious. When I saw this recipe by a fellow blogger , I was immediately drawn to try it out myself. One because I love pound cakes and secondly, my husband loves anything with coconut. So, I had to try it for myself.

Ingredients:

2 sticks of unsalted butter

1 cup organic cane sugar or regular sugar

1 1/3 cup all-purpose flour

3 large eggs

4 ounces shredded, unsweetened coconut (get good quality one from health store)

1 teaspoon pure vanilla extract

¼ teaspoon salt

For the glaze: optional

½ cup sugar

2 – 3 tablespoons of coconut milk or coconut water

1 teaspoon pure vanilla

Method:

Heat the oven to 350 degrees. Grease and flour a loaf pan. With paddle attachment cream the butter and sugar until light and fluffy in the kitchen aid mixer, you can also use hand blender if you do not have a kitchen aid mixer. Add half of the flour and beat some more. Meanwhile, in a separate bowl add the vanilla to the eggs. Then add eggs one at a time to the batter, beating well after each addition. Mix the coconut with the remaining flour along with salt. Mix it in the remaining batter and give it a quick stir.

Do not over mix it. Pour the batter into prepared pan. Bake about 35 – 40 minutes. It should look golden in color and you can test it with a toothpick inserted in the center of the cake. If the toothpick doesn’t come out clean, leave it in for few more minutes.

Make the glaze: optional

Combine sugar and milk in a pan and simmer for 10 minutes on stove. Remove from heat and add the extract.

When the cake is completely cool, take out the cake on a serving platter; pour the glaze. Cut it in to slices and serve it warm with some fresh fruits and coffee.

By the way, the cake tastes great when its warm right out of oven and even better after it has rested a day. You can leave it on room temperature for a couple of days. But let’s be honest it won’t even last that long. You can also toast it a little bit and enjoy it the following days. Either ways it is one delicious keeper.
