Spicy Chipotle Veggie Pasta

Spicy Chipotle Pasta with vegetables like asparagus, bell peppers, peas and shallots in a spicy smoky chipotle sauce.

Recently, my husband ordered Spicy chicken chipotle pasta at Cheesecake factory, and I tried a bite. It was so delicious. I could not know what that smoky flavor was. So, I wanted to recreate the recipe for it. So, that we can a different flavor of pasta in rotation.

Apparently, the sauce is the star of the dish, with that smoky chipotle flavor and its also creamy. Who doesn’t love that? The vegetables are also perfect in this dish. I liked how asparagus; peas compliment the dish.

Any shape like penne pasta, rigatoni or the one I have used in the recipe works well. I have used crescent shape. I think even spaghetti or fettucine might be a good option. Eventually any shape will turn out to be good.

There are three components in this dish pasta, sauce and veggies.

Also the chipotle flavor is not for everyone. It’s not that spicy but it does have enough heat to be called spicy. The spicy smoky flavor comes from the chipotle pepper sauce which is the star of this dish.

The chipotle sauce is of course made with chipotle peppers. You can either use chipotle pepper or ready-made sauce. There are other dry herbs and cream in the sauce.

For vegetables, I have used similar ones to the OG. Asparagus, shallots, peas, peppers, broccolini rabe, etc used. You can also use other vegetables like olives, artichokes, or even mushrooms. I like to add a lot of veggies.

There are some other ingredients that balance out the flavors like honey. It all works well.

I haven’t tried this recipe in an instant pot, but I am sure it will work in it. Incase if you wish to use it, saute veggies first, and then make sauce and add them along with pasta.

Leftovers stay well in a tight container for 2-3 days, if you have any leftovers.

  • Use any shape of pasta of your choice.
  • You can use different vegetable of your choice too.
  • To make it vegan – replace cream with coconut milk and honey with sugar.

Ingredients

  • 8 Oz. Pasta
  • 2 tablespoons olive oil
  • ¼ cup shallots finely chopped
  • 3 garlic cloves grated
  • ½ cup red bell peppers chopped
  • ½ cup yellow bell peppers chopped
  • 1 pound asparagus
  • 1/3 cup peas
  • 1 small broccolini rabe
  • 2-3 tbsp chipotle adobo sauce
  • ½ cup heavy cream
  • 2-3 tbsp parmesan cheese
  • 1 tsp lemon juice
  • Salt to taste
  • ¼ tsp Black pepper
  • ½ tsp Italian seasoning
  • 1 tsp honey
  • Cilantro or parsley for garnish

Instructions

  • Boil pasta as per package instructions. Keep them al dente. Strain and reserve about ½ cup water.
  • In a large pan or skillet add the olive oil over medium heat. Add the shallots, garlic and sauté until they turn slightly brown.
  • Add bell peppers, asparagus, broccolini rabe and cook until you see some charring on them. Be careful not to burn it.
  • Prepare the sauce. Add chipotle adobo sauce in the vegetables, along with parmesan cheese, heavy cream. Let it simmer for 2-3 minutes. Add in the pasta and seasonings.
  • Cook for 2-3 minutes, stir to coat everything. Do not overcook, you want veggies to have some bite. As it sits it will thicken up.
  • Garnish with cilantro and serve.
