Stuffed Palak Paneer Paratha

Palak Paneer Paratha is an Indian flatbread made with spinach dough and paneer filling which stuffed inside the dough. One of my favorite foods is parathas. They are filling and work so good as heavy breakfast or dinner too.  

Alu Parathas are my favorite. Then this spinach paratha stuffed with paneer also must be delicious. If you like palak paneer, this paratha will also be your favorite.  

I love making stuffed parathas on our outdoor grill. It’s so much fun to make them. I often want to have people over my place and make different fillings and have a paratha party in our backyard.  

Parathas sound like work, and they are but I still feel they are easier to make specially if you divide up the steps. Often, I like to make the dough in advance, and therefore you can also make filling a day in advance.  

Everyone has different system in place to make parathas. However, I like to roll out all parathas at the same time, and then start on cooking them on griddle.  

Often, I might not like butter on everything, but with parathas its match made in heaven. Lol. Apparently, you need some home style makhan or butter. I usually love parathas with side of yogurt and pickle or raita.

My mom would make alu parathas with tomato soup and I love that combination too. Sometimes, I like to have them with tea as well. You can go wrong any which way you enjoy them.  

Stuffed parathas are traditional to North India, but we all make them. My mom used to make vegetable stuffed paratha so that we would eat all veggies that ideally, we would not.  

Parathas can be plain too, without any stuffing inside them. Sometimes, I make triangle whole wheat paratha, layered with spices and kasuri methi.

Ingredients  

Palak Dough is prepared of course using spinach either blended in the dough or use chopped spinach. Dough is slightly spiced with green chilies and seasoned with salt. There are some other additions you can do, like add ajwain seeds, cumin seeds.  

To make Paneer filling, use good soft grated paneer and I like to add just one potato to help bring everything together. Other ingredients I add are onions, dry spices and keep it light and simple.  Let me know if you try it!

Ingredients

Dough

  • 2 cups whole wheat flour
  • 2 cups spinach leaves
  • 1 green chili finely chopped
  • 2 tbsp oil
  • 1 tsp Salt to taste

Paneer Filling

  • 2 cups Paneer grated
  • 1 medium sized potato boiled
  • 1/3 cup onions finely chopped
  • 1 inch piece ginger grated
  • 1 green chili finely chopped
  • 1 tsp Salt to taste
  • ½ tsp red chili powder
  • ½ tsp turmeric powder
  • 1 tsp cumin-coriander powder
  • 2-3 tbsp finely chopped cilantro
  • Oil to cook parathas

Instructions

  • In a food processor, add all the ingredients for the dough, add ¼ cup water and process it and make dough. Let the dough rest until then make the filling. If you want to knead dough with hands, then cook spinach for 5 minutes in water and puree it or chop raw spinach. Either way, it will taste good.
  • In a pan, slightly sauté onions in 1 tbsp oil. Add grated ginger and finely chopped chilies. Let it cool down and add remaining ingredients of the filling like paneer, boiled mashed potatoes, dry spices red chili powder, coriander-cumin, turmeric powder, salt. Taste the filling and adjust the seasoning if you need to.
  • Divide the dough into medium sized balls. Dust and roll the dough ball to make a 3-4-inch circle. Fill approximately 2 tbsp of filling in the center and seal it tightly without leaving any air inside the pocket. And flatten out the ball.
  • Use dry flour for rolling out the dough into circle. Roll gently to make about 6-inch paratha. Heat a pan on medium heat and transfer the paratha to the pan and cook until its lightly browned and turn upside down and cook on the other side too. Once you turn the paratha, use some oil to brush on it. Apply oil on both sides before flipping.
  • Remove and serve them warm with raita, plain yogurt, and pickle.

Notes

Either use pureed spinach or finely chopped spinach while kneading the dough.
