Easy Cherry Chia Pudding
Is there anything easier than having a breakfast ready with few minutes of prep work? The days when I work at the courthouse, I do not have an office to work from. My office for the day is inside the courtroom 🙂 So, my go to breakfast for those types days is usually something quick and in jar. Chia pudding makes a great on the go breakfast that you can have on those situations. It is quick and filling too. Keeps you easily full until lunch time.
Not only it makes a great breakfast, but it also can be enjoyed as a snack or dessert. Its healthy and you know, I don’t claim to make a lot of healthy dishes. But when I do, and I indefinitely want to highlight it.
It’s quite easy to make chia pudding. You need chia seeds, milk, and sweetener. I used almond milk as I was out of regular milk. But you can use any kind of milk. Coconut milk or cashew milk will taste so good.
The only thing you need to make sure is to incorporate the chia seeds in milk properly otherwise it will be floating on top.
If you plan on leaving them in the fridge overnight, then make sure its incorporated before you do so and there are no lumps of chia.
Sweetener is also optional as it depends on your personal preference. I add a pinch of salt because it just enhances the sweet flavors.
You can literally use any type of toppings, dried fruits, fresh fruits or compote the one I am sharing today. There are other nuts, cacao nibs, coconut flakes etc. that can be added too. Flavoring wise you can add cinnamon powder, cardamom or vanilla extract.
My favorite combo is any fruit compote, with cashew butter and cacao nibs for texture. You cannot have a better breakfast.
If you do not like the thick pudding like consistency, you can always add more milk and have it as a drink. Win win!
Let’s talk about cherry compote. If I love something about summer its that all the fresh fruits and jarring them for future use. I love to make compotes in small or large quantities and store them. You can always have it on pancakes, waffles, ice cream, yogurt and this pudding. This recipe is more than what is required. You can store rest to enjoy some other time. The only time you must wait is for it to cook and cool down. But anyways we have to wait for the chia seeds to get properly bloomed in milk.
Easy Cherry Chia Pudding
Ingredients
Chia Pudding
- 4 tbsp chia seeds
- ¾-1 cup milk I used almond milk, you can use any
- 1 tbsp honey optional
- Pinch of salt
Cherry Compote
- 1 cup cherries pitted chopped
- 2 tbsp water
- 1-2 tbsp sugar depends on tartness of fruit
Instructions
- Wash cherries and remove the pits with the help of cherry pitter. Roughly chop them.
- Take pitted, chopped cherries in a pan, along with water and sugar. And, cook it until cherries breakdown and turn into jammy consistency on medium heat. It will take about 15- 20 minutes.
- Keep stirring in between. You can add some more water if you feel like its sticking.
- The more water you add, the longer you will be cooking it to reduce the water.
- Once, it looks thick consistency, remove it from the heat. Let it cool down.
- Meanwhile it is cooling, take chia seeds in a medium sized bowl or two small jars.
- Add milk and honey, pinch of salt.
- Salt is totally optional. But I like that slight taste of salt in my sweet breakfasts or desserts.
- Stir it to mix the chia seeds to the milk. Leave it aside for at least 4 hours or longer until chia seeds have doubled in size and the mix looks thickened.
- It should have pudding like texture. Once, it is ready add the cherry compote and serve it.
- You can add other flavorings too- vanilla/almond extract, cinnamon, cardamom etc. I kept it simple.
