Egg Bhurji – Scrambled Egg

If I like something that my husband cooks it is this Anda (Egg) Bhurji (scrambled). I had never tried  homemade version of bhurji , until when my husband prepared it for me. Every weekend my husband prepares breakfast. Although, I have to assist him lot of times or else kitchen would be all messed up. But, believe me I have never prepared this dish myself. Firstly, because we were not allowed to bring eggs inside our house back in India. But, we would eat them outside on the may a roadside stall. Because such dishes you never find at sophisticated restaurants. It is more like street food. I have to say my husband really cooks a lovely “anda bhurji” and I am not allowed in the kitchen when he cooks hahaha…because I would tell him to keep everything at its proper place…actually I enjoy teasing him a lot while he is cooking..he would not leave the stove for a second also..as if he is going to burn something. It just makes me laugh ..my husband is called buddy by his colleagues – aww they just don’t know how to pronounce his name in the perfect way! So I call this dish “Buddy’s Anda Bhurji”. Hope you all enjoy it.

Ingredients:

  • 4 eggs
  • 2 Small green chillies chopped
  • 2 Cloves of garlic chopped
  • 1 Small onion chopped
  • 1 Small Tomato chopped
  • 2 tablespoons Oil
  • 1 teaspoon Turmeric Powder
  • 11/2 teaspoons Red Chilli powder
  • 2 teaspoons Cumin-coriander powder
  • 1 teaspoon Garam masala
  • Salt to taste
  • Lots of love
  • Not moving away from stove

Method:

  1. Take oil in a pan on medium heat and green chilies and garlic to it and saute for two seconds or so and add the onions.
  2. Once the onions turn translucent add the tomatoes and cook it well.
  3. As soon as the tomatoes are done , it should take 2 minutes to cook down this mixture add the spices. And, mix well.
  4. And, immediately add all the eggs in to it. But, before that I would break each egg one by one in another bowl to see if they are not rotten or spoiled from inside. Rather than adding them directly in to the pan. Let the eggs cook for a minute or so and just when they look they holding up then scramble them thoroughly.
  5. And, then with the help of a potato masher start mashing up the eggs so that they will get crumbly.
  6. As soon as they look cooked and nicely mixed up. The mixture should be slightly dry and cooked of course.  Remove and serve them with some toast and ketchup on side. This bhurji makes lovely sandwiches from leftover.
