Chocolate Waffles with strawberries and Creme Fraiche

Waffles are a classic brunch or breakfast staple. I have been making waffles for so many years at home, I have tried and tested many recipes until I really got the taste and texture I desired for. These waffles have a nice crispy edges and soft interior.

One recipe works for all the different flavoring or styles you can adapt to.

Crisp and buttery on the outside, fluffy on the inside, homemade waffles are a breakfast or brunch staple. I love the smell of waffles.

Waffles make great dessert option too topped with Nutella and strawberries. It has those perfect nooks and crannies that keeps the toppings in place. Belgian waffles are often made with a yeasted batter. These classic much simpler waffles are made using buttermilk and baking powder to give it that nice fluffy texture.  

As I told you I have tried so many recipes. This to me is my perfect waffle recipe.

Let’s look at the ingredients

It has basic waffles ingredients. But I add just a tablespoon of corn meal and that gives it a very nice just enough crunchy texture. It’s optional if you do not have it.

I have used buttermilk in the recipe, but you can also make good waffles with milk. If you do not have buttermilk at home, you can make it using yogurt and milk.

Baking powder is another important ingredient that makes waffles rise and puffy, and with soft interiors.

Beating egg whites and then adding them to waffles is also a very critical step. They really give them that extra edge to regular waffles. It hardly takes time if you use a hand held blender to whisk egg whites.

To make chocolate waffles, I added cocoa powder and chocolate chips both.

The most known topping is butter and maple syrup, but I love adding options. For brunch with friends and family, you can set a waffle station with toppings and everyone can add their own toppings. How fun would that be?

Some of the toppings we love, and you can add;

Powdered sugar, fresh fruits, nuts, fruit sauces or compotes like raspberry sauce, blueberry compote. You can even make nut butter and add them on top instead of regular butter. I love pecan cinnamon butter to top waffles sometimes.

While whipped cream is a great option, I absolutely love creme fraiche. It’s different than whipped cream. Crème Fraiche has slightly tangy taste. It is not easily available everywhere, but I have always found it at shoprite and whole foods.

Caramel or chocolate sauce is another great topping.

For ultimate sweet and savory taste, try scrambled eggs and fried egg on top of your waffle.

While the toppings can be endless, the star is always the waffles. Let me know, what other toppings go well on waffles.

Ingredients

  • 1 cup 1 tbsp flour
  • 3 tbsp cocoa powder
  • 1 tbsp cornmeal
  • 1 tbsp sugar
  • 1 tsp baking powder
  • Pinch salt
  • 2 eggs, separated
  • 1 cup buttermilk
  • 1 tsp vanilla extract
  • ½ cup melted butter
  • 2 tbsp Chocolate chips
  • Strawberries
  • Crème Fraiche
  • Maple syrup

Instructions

  • In a medium mixing bowl stir together flour, sugar, cocoa powder, corn meal, baking powder, and salt. Make a well in the center.
  • Separate the egg yolks and egg whites.
  • In another bowl mix the wet ingredients, by beating the yolks slightly with a whisk. Stir in buttermilk, vanilla extract and melted butter.
  • Add yolk mixture to the dry mixture. Stir it up. It is okay if it looks lumpy.
  • In another small bowl beat egg whites using a whisk until stiff peaks form.
  • Carefully and gently fold egg whites into flour and yolk mixture. Do not overmix the batter. The egg whites should not loose their stiffness.
  • Pour half cup of the waffle batter into your waffle iron, making sure not to overfill it. Sprinkle chocolate chips for extra chocolate taste. Pour some more batter to cover the chocolate chips and cook it.
  • Cook them as per your waffle iron instructions about 5-6 minutes.
  • Serve it warm, topped with strawberries, crème fraiche and maple syrup.
