Turmeric Milk Muffins
Turmeric Milk or Golden Milk or some even call it Golden Latte. None of these names are relevant, it is called haldar nu Doodh or Haldi Doodh and it’s a very common drink we grew up forced to drink during winter months. It comes together in just few minutes and suppose to have anti-inflammatory qualities.
Our moms would force us to drink this as a child. Honestly, no kid really likes this drink. Some moms like mine would also add powdered nuts to the turmeric milk, with some cardamom and sometimes saffron.
It would heal cold and cough during winters and it also provides immunity for those cold months. Since the popularity of this drink in the western world, it has been annoying to see different names given to it.
What is Haldar nu Doodh?
Haldar means turmeric and doodh means milk. It’s made with turmeric, milk and a little pinch of black pepper, cardamom, and honey for sweetness.
My mom would also add a tiny spoon of ghee in haldar nu doodh.
Turmeric powder can easily be swapped for fresh turmeric, its just a little bit stronger in taste. We usually pickle fresh turmeric.
This healing drink is earthy flavors and according to any Indian mom turmeric heals everything from cold to flu to so many other ailments.
I decided to turn this drink into breakfast muffin recipe. See, I am here to prove to my mom that I can finally drink turmeric milk just that it’s a muffin. 😊
The muffin recipe is very simple and easy just like most muffin recipes.
It has dry ingredients like all purpose flour, almond meal, baking powder and soda, salt.
For wet ingredients I have used milk (imp), yogurt, one egg, oil and ghee. Oil makes muffins moist, and I wanted to incorporate some ghee also. They have perfect texture and flavor.
The other main ingredient of this recipe is Thandai Masala. Now, I would only drink this milk if ground powdered nuts were added. So, thandai masala makes perfect addition as it also has spices in them which is also crucial ingredient of turmeric milk.
My thandai masala does not include spices like dry ginger powder, cinnamon and nutmeg. So, I decided to add them additionally. If you are not fond of one of the spices, its okay. They do add nice flavor though, one or two here and there won’t be a big difference. For me cardamom is very important for the same flavor that I had in turmeric milk while growing up.
You can make thandai masala in big batch and store it for few days. So, that you can have turmeric milk anytime you wish to make some or add it to any other recipes like this one.

Tips
Do not over mix the batter.
Do not over bake the muffins. They turn out dry.
If you like more turmeric, you can add ½ tsp more.
Turmeric Milk Muffins – Haldar Doodh Muffins
Ingredients
- 1 cup all-purpose flour
- 1/2 cup almond meal
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp turmeric
- 2 tbsp ghee melted but cooled
- ¼ cup oil
- 1 tsp vanilla or almond extract
- 1/3 cup milk
- 3 tbsp yogurt
- 1 medium egg
- 3/4 cup sugar
- 2-3 tbsp Thandai masalo refer
- 1/8 -1/4 tsp ginger powder optional
- Pinch nutmeg optional
- 1/4 tsp cinnamon optional
- 2 tbsp chopped nuts pistachios, almonds, cashews
Instructions
- Pre-heat oven at 350 F. Mix dry ingredients – all purpose flour, almond meal, baking powder, baking soda, salt and turmeric powder in a bowl and mix.
- In a mixing bowl, add melted ghee, oil, egg, vanilla extract, milk, yogurt and sugar. Give it a good whisk.
- Mix the dry and wet ingredients, thandai masala and chopped nuts if you are adding them, give it a stir until everything is well mixed in.
- Do not over mix it. Just enough until you do not see any dry spots of flour.
- Transfer the muffin batter in a pan lined with muffin liners. Bake them for 20-25 minutes until they are baked and looks golden yellow in color. Test the center with a toothpick to check doneness.
- Remove them from the oven and let them cool on wire rack.
- Serve them with coffee or milk.

- Masala Haldar Doodh often has different spices and some recipes also has nuts in them.
- Adding nuts is optional. They add nice crunch.
- Store them in air-tight container.
