Bhindi Do Pyaza – Okra Subji

Bhindi do Pyaza is a flavorful dish made with Okra, dry spices, and lots of onions.  It’s cooked in a tangy onion-tomato masala and pairs so well with rotis.

Bhindi do Pyaza literally means okra cooked with double onions. Onions are used in two different ways in this dish and therefore the name. People have such love hate relation in liking okra.

This dish is something that’s going to change the way you eat Okra. It’s something that can be made with regular weekdays or for special occasions or guests.

The consistency of the dish is not too saucy, but certainly you can make it saucier. If you prefer more drier version, just avoid adding too much water.  

Fun Fact – In India, we call it lady fingers not really Okra. Bhindi is the hindi name of the vegetable.

Ingredients for Bhindi

Of course, the ingredients include the main ingredient Okra also known as bhindi in India. Use a slender/slim, green looking okra with no blemishes. It has minimal seeds. I have always used fresh Okra so; I can only recommend fresh ones.

The other ingredients include onions, tomatoes, yogurt, dry spices, aromatics like ginger, garlic and green chili and yogurt.  

Some suggestions or tips

Okra is disliked by so many people because it is slimy.

Rinse Okra under running water individually if needed. Spread out the okra on a paper towel or kitchen towel. Let it air dry or you can even pat dry. If I am making okra in the evening for dinner, I will do this step earlier in the day.

For lunches, either do it in the morning and let it air dry or a day before. It helps so much in making okra slime free.

I like to sauté okra in some oil before adding other ingredients specially wet ingredients like water or yogurt.

Ingredients

  • 1 lbs Okra
  • 4 tbsp Oil divided
  • 1 tsp 1Cumin seeds
  • 1 1 Green chili finely chopped
  • 1 Inch piece Ginger grated
  • 2 cloves of Garlic grated
  • ½ cup onion finely chopped
  • ½ cup tomatoes finely chopped
  • Salt to taste
  • 1 tsp red chili powder
  • ½ tsp turmeric powder
  • 1 tsp coriander cumin powder
  • ½ tsp garam masala
  • 1/4 – 1/3 cup yogurt
  • ½ cup onions cubes
  • ¼ cup tomatoes cubes
  • Cilantro to garnish

Instructions

  • Chop cleaned okra into desired shape. I chopped it on bias in big chops. Discard the top and slight bottom part.
  • Take oil in pan on medium heat. Add chopped up okra and saute it for few minutes until it become crispy and looks cooked. Remove it and leave it aside.
  • Take some more oil in a pan on medium flame. Once the oil is hot, add cumin seeds. Let them splutter. As soon as they splutter add chopped up green chilies, ginger and garlic. Stir it and cook it for few seconds. Add finely chopped onions.
  • Saute it until onions are translucent and add tomatoes. Stir and cook until they soften up. Now add all the dry spices red chili, turmeric, coriander-cumin powder and garam masala. Stir and add whisked yogurt.
  • Add cubed onions and tomatoes too. Give it stir and let them cook just enough to have slight bite to them. Add the okra that was left aside. Mix and garnish it with cilantro.
