Baked Vegetarian Ravioli
This recipe of Baked Ravioli is super easy to prepare and it’s an easy make ahead recipe. It’s made with marinara sauce, roasted vegetables, ravioli baked with cheese and flavorful seasonings.
This recipe will be a favorite along with being delicious that it comes together so easily and effortlessly with most of the ingredients are store-bought. You just assemble it and bake it.
The raviolis need not to be boiled prior to assembling. Isn’t it the best feeling. I didn’t even thaw the ravioli. They will bake along with the sauce which is more than enough to cook the ravioli.
Components of the Dish
Marinara Sauce – you can make your own sauce, but I have taken a short cut and used my favorite store-bought sauce. I used basil marinara. I added tiny bit of cream to the sauce just because I had some on hand and it make sit slightly creamy.
Ravioli – I used frozen spinach and cheese raviolis. Use your favorite raviolis either with mushrooms, just cheese or meat filled.
Vegetables – I wanted to add vegetables to make it more filling and healthier, not just plain dish. I used vegetables like zucchini, broccoli, onions, and peppers. You can easily add mushrooms, spinach, kale, asparagus, or even eggplant. Any vegetables that would be good in Italian dishes would be a good choice. You can even add some beans if you like chickpeas or white beans. I roasted the veggies before adding them.
Cheese – I have used mozzarella and some mix blend that I had on hand. But feel free to use cheese of your choice. I also added some pecorino romano.
Seasonings – I used some chili flakes, Italian seasonings, and basil.
Storage – This dish can be easily refrigerated and prepared in advance. I t saves so much time. Once you have assembled it, cover it tightly and store in the fridge for upto 2-3 days. Because it has cheese, I won’t store it longer.
If you want to store it for longer time, then I would suggest simply freeze it. Let it thaw for 30 minutes and then bake it.
Be sure to serve this with salad and a good wine, some dessert!
Baked Vegetarian Ravioli
Ingredients
- 9 oz. ravioli
- 1 tbsp olive oil
- 1 -1 ½ cup vegetables onions, broccoli, bell peppers, zucchini
- ½ tsp chili flakes
- Salt to taste
- 1 tsp Italian seasonings
- 1 1/4 cup marinara sauce
- 1 1/4 cup mozzarella cheese
- ¼ cup pecorino Romano
- Fresh basil or some Basil pesto
Instructions
- In a pan or skillet on medium heat add olive oil, once it heats up add vegetables and sauté them until slightly tender and cooked. Add seasonings and salt.
- Spread half of the sauce on the bottom of the pan 9 X 13-inch baking pan. Layer it with half of the ravioli in one layer. Add vegetables, some sauce and cheese and repeat with remaining raviolis, sauce, veggies, and cheese.
- Cover with a foil, bake at 350 F for 35 minutes and then remove the foil and bake it for another 5-7 minutes.
- Remove and serve with some freshly chopped basil or basil pesto on top.
