Favorite Lemon Blondies

If you love anything citrus flavored, then these are going to be you’re your favorite blondies.

Lemon blondies or brownies, not much of a difference are sweet and sour, citrusy all in one. I am a huge fan of anything lemon or orange. These are so quick and easy to make. They have amazing finger-licking good glaze that makes these blondies so delicious.

Just a few handfuls of ingredients and you got yourself some delicious blondies ready. I have always gifted these to people, and they have always loved them. They disappear fast enough when I am hosting people over anytime.

The best thing about them is they can be served as light simple dessert, or at brunch, or goes well with coffee or tea. They keep well for several days and can be frozen, if you have nay left over.

Tips and Suggestions

Overall, recipe is quite simple and easy. Just few things to keep in mind and you will have fail proof blondies.

Always use room temperature ingredients. Butter, eggs, In this case we will be using melted butter.

Don’t over bake them or else they will come out slightly dry. There won’t be drastic color difference but when you see it looks set and knife inserted comes out clean. Take them out. The residual heat also works.

If you like a little more gooey or moist, remove them at 12-13 min mark. I baked them for exactly 15 minutes.

Glaze them while they are still warm, as soon as they come out let them cool down a bit and glaze them. Glaze will immediately act as a barrier and in colder months glaze will set quickly. If you want  to speed up, just store it in the fridge for few minutes.

Glaze – I like the layer of glaze, its good balance. If you prefer thicker glaze increase powdered sugar to ¼ cup more than suggested quantity. If you do so, add a tbsp extra lemon juice to balance out all the sweetness of glaze.

You do not need to store it in the fridge, I personally leave it covered at room temperature for best texture.

Feel free to use a handheld mixer, kitchen aid or just a whisk/spatula. Do not over mix the batter.

Do not over bake them. I guarantee you 15 mins is perfect.

Ingredients

Blondie Batter

  • ½ cup unsalted melted butter
  • ½ cup granulated white sugar
  • ½ cup confectioner sugar
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
  • 2 tbsp lemon juice
  • 2 tbsp lemon zest from 2 lemons
  • 1 ¼ cup All-purpose flour
  • ¼ tsp salt
  • ¼ tsp baking powder

Glaze or Icing

  • 1 Cup Confectioners’ Sugar
  • 2 tbsp lemon juice
  • 1 tbsp lemon zest

Instructions

Make Batter

  • Preheat the oven to 350°F (180°C)
  • Butter or spray an 8-inch square baking pan lined with parchment paper.
  • Mix the dry ingredients – flour, salt and baking powder and give it a whisk or stir. Leave it aside.
  • Melt butter either in microwave or stove top in a pan or butter warmer. Let it cool slightly, but still liquidy add both sugar (granulated white sugar and confectioners’ sugar) one by one and whisk or if you are using a mixer, let it mix for 1 minute.
  • Add eggs and vanilla extract, followed by lemon juice and zest. Whisk everything until it looks homogenous.
  • Add the dry ingredients into wet mix and using a spatula, mix everything well. The batter will be thick. Do not over mix it, make sure dry ingredients are mixed well.
  • Transfer batter to prepared baking pan. Make sure to even out the batter in the pan.
  • Bake for 15 minutes and at 350 F.

Make Glaze

  • Once baked, let them cool down a bit, like for 8-10 minutes. Meanwhile, make glaze. Mix all the ingredients of the glaze and give it a whisk or stir. If its too thick, you can add a tbsp extra lemon juice or milk. Just enough to make glaze pourable but not too liquidy.
  • Pour glaze and using an offset spatula or spoon, just spread the glaze evenly. If you like you can sprinkle some more of lemon zest.
  • Once the glaze is set, remove the blondies with the help of parchment paper and cut it into squares.
  • I glazed it in the pan itself and let the glaze set completely before making squares.

Notes

 
  • If you want you can totally, add some limoncello into the glaze to make them more fun. I know you want to.
