Chocolate Hazelnut Burfi

These Hazelnut Burfi is so perfect for the festive season. These are inspired from famous candy and my Hazlenut Katli. These are made with toasted hazelnuts flour, milk powder and hazelnut spread.

I wanted to make this flavor of burfi for quite some time.   Without a doubt, I love pistachios and anything Hazelnut as well. I made this quick burfi for Raksha Bandhan celebrations this year. Everyone loved it and the best part was I made it so quickly that I will always keep this recipe for emergency sweets making at home. Yes, if you have some of the ingredients at home, then it’s super easy.

Hazelnut Burfi

Let’s talk about ingredients

Ingredients for Hazelnut Burfi:

  • Hazelnut Flour or Hazelnuts:  You can either toast some hazelnuts and grind them into flour or use store-bought flour depending on your time and convenience. Bob’s Red Mill has a hazelnut flour and easily available at so many stores. If you cannot find it, then buy some hazelnuts, skin off preferably or you will have to remove skin after toasting them. It does add an extra step. So, hazelnut flour works fine and makes it far easier. You can store leftover hazelnut flour in the fridge. So, it does not go bad.
  • Milk and Milk Powder: This recipe is not vegan by any means. Milk powder gives it creaminess and brings the nut mixture together. I always use whole milk and full fat milk powder.
  • Sugar: for sweetness we have used some brown sugar or granulated white sugar.
  • Ghee: some ghee to cook the mixture. If you do not have ghee, just use some butter- let the butter melt and brown a bit, and then add rest of the ingredients.
  • Vanilla extract: Vanilla extract gives it a nice flavor.
  • Hazelnut Chocolate Spread: For the top layer, I have used hazelnut spread.
  • Garnish – Toasted hazelnuts and edible gold or silver.

Tips/Suggestions:

  • Buy store bought hazelnut flour from Bob’s Red Mill.
  • If your mixture feels dry while mixing, add few tbsp of extra milk.
  • Warm up hazelnut spread for easy spreadable consistency.

  • ½ cup milk powder full fat
  • ½ cup whole milk
  • 1 tsp vanilla essence
  • ½ cup hazelnut spread Bonne Maman or Nutella
  • 2 tbsp Toasted hazelnuts and edible silver/gold for garnish

Instructions

  • Take 2 tbsp ghee in a pan on medium heat, add hazelnut flour, sugar, milk powder and milk in it. Mix everything until the mixture comes together. It should take approximately, anywhere between 8-10 minutes. Keep stirring, you cannot leave it by itself. Sugar should have melted too.
  • Once it starts leaving the sides, and it will be cooked.
  • Transfer it a greased plate or pan. I love to use tart pan for this. Let it cool down.
  • Once burfi cools down, warm some hazelnut chocolate spread in microwave for just 10 seconds and add it on top of burfi mix. Spread using a flat spatula. Immediately, add chopped hazelnuts and lightly press them in the chocolate spread.
  • Place the tray in the fridge to completely set. The burfi has soft texture even after taking out from the fridge. Once it sets, it is easier to stick the edible silver or gold.

Happy Diwali !
