I have made pistachio butter for a recipe previously. If you have food processor or strong efficient blender than look no further. Occasionally, I like nut butter on toast, in oatmeal or with apples. I cannot eat apples without nut butters. It’s so delicious!

What is Thandai and why people drink it during Holi festival?
So, Thandai name comes from the word Thanda (cool) which means something to cool off. Holi festivities are during the start of summer season in India. After playing holi, thandai gives that extra boost of energy and cools you down in hot weather. It is also believed to be served to Lord Shiva. Thandai drink is made with different concoctions, like ‘bhang’ is also added to it. It is also spring season, so thandai is considered to provide strength to immune system.

Thandai mix is usually added to milk and you have a drink ready. We ground up the dry spices to make a powdered mix which we keep blending until we get nut butter consistency with fragrant flavors.
So, this is my take on thandai mix and it stores well in the fridge. It tastes super delicious on so many things. You can add in oatmeal, top it off on pancakes, waffles etc. Stuff dates with thandai butter, etc.
Basic Tips or Suggestions
When it comes to making any nut butter, patience is key. You need to run food processor for atleast 10 minutes to get creamy thick consistency. Do not give up!
Always use roasted nuts. Roasted nuts do not taste raw and they release natural oils while roasting so it helps in making nut butter.
Roasted nuts add lots of flavor than compared to raw nuts.
I have always used cuisine art food processor to make nut butter, but if you have a strong functioning blender; use it.

Thandai Nut Butter
Ingredients
- 4 tbsp almonds roasted
- 4 tbsp cashews roasted
- 4 tbsp pistachios unsalted, roasted
- 1 tsp fennel seeds
- 2 tbsp melon seeds roasted
- 1 tsp poppy seeds
- ½ tsp whole black pepper
- 3 tbsp dried rose petals
- 1 tsp cardamom powder
- Small Pinch of Saffron – 5-6 strands
- 1/2 tsp sugar or any sweetener
- 1/8 tsp salt
Instructions
- Roast nuts if you haven't either on stove on medium heat in a pan. Or roast them in the oven at 350F for about 10 minutes. Be careful not to burn them.
- Let them cool down slightly until warm.
- Transfer them with other ingredients in a food processor and blend until creamy, pausing to scrape down the sides as required. It will look like nothing is happening. But, keep blending. If the food processor overheats, then pause and let it cool and then do it again. It will look like clumps in the beginning but will come around creamy and smooth.
- Once it turns creamy and smooth, remove it in a glass jar with a lid and store it in the fridge. It can stay up to long time, at least 2-4 weeks.
