Rabdi Tiramisu Cups – Easy mithai

Creamy Rabdi Tiramisu made with lady fingers soaked in badam milk, layered with saffron cardamom flavored rabdi, whipped cream; garnished with pistachios, rose petals.

Apparently, I had this idea, of dipping lady fingers and making a quick recipe from it. So, last year I made this desert for my Diwali party, and it was so quick to make it. Everyone loved it. I had a last-minute home repair just before the party and this dessert saved my day. I had a lot of other mithais that I was serving like this Hazelnut Katli, Paan Cookies, etc. but I wanted one more dessert to impress.

Further, I realized that not everyone likes to make elaborate desserts and be in the kitchen all day long. Sometimes, its totally normal and okay to take short cuts and make some thing delicious.

What is Tiramisu?

Tiramisu is an Italian dessert made with coffee-soaked lady fingers (sponge cake) and layered with mascarpone cheese. So, this dessert might be far different from original tiramisu. SO please excuse me.

The technique of dipping the lady fingers in liquid and layering it is the only thing I have adapted from it. I didn’t want to make the dessert heavy by using mascarpone cheese, so kept it simple.

Store- bought lady fingers are easily available everywhere, even a small supermarket near my work carries it. Just look closely or ask store employee. The badam milk I have used is available at Indian grocery stores, you can get badam milk or kesar milk. Both will be fine. They are in cans.

This instant quick rabdi with literally 3 to 5 ingredients. Milk, ricotta, sugar, cardamom and saffron.

Whipped cream also took 5 minutes to come together. When I say this dessert literally comes together in minutes, I mean it.

Variations

You can make this in one single try also. But I prefer it looks better in individual cups or glasses. When I made it for friends, I kept portion smaller as I knew my friends like smaller portions.  

I also keep sweetness balanced on lower side, because everything has some amount of sugar in it and so it balances it out. Do as per your preference.

Storage

Store them covered in plastic wrap. It is a great make ahead dessert.

These Rabdi Tiramisu cups are so quick and easy to make.
They are made with store-bought lady fingers dipped in some badam milk and layered with homemade luscious rabdi that is flavored with saffron and cardamom and whipped cream; garnished with pistachios, rose petals and edible silver.

Ingredients

  • 1 ¼ cup Whole Milk
  • 15 Oz. Ricotta or fresh paneer crumbled
  • 3-4 tbsp sugar
  • ½ tsp cardamom powder
  • ½ tsp saffron
  • 12 lady fingers
  • 2 cans Badam Milk or Saffron Milk Mtr brand
  • ½ cup whipping cream
  • Nuts like pistachios, rose petals, saffron strands, edible silver or gold

Instructions

  • Heat up milk in a pot or pan, let it come to soft boil. Then add ricotta cheese, sugar, cardamom powder and saffron strands. Stir everything to mix and let it warm up and it should look thick. Once it looks thick, turn it off. Remember, it thickens up more once it cools down. So, be mindful of the thickness.
  • Let it cool down before assembling.
  • Make whipped cream by whipping it in a mixing bowl until you get medium peaks. Be careful to not over whip. If you like you can add ½ -1 tbsp sugar in the whipping cream. I did not because everything else has sugar.
  • Remove badam milk or saffron milk in a bowl, and warm it up for a minute in microwave. Warm milk helps lady fingers absorb the liquid. If its cold or room temperature it won’t soak.
  • Layer the tiramisu cups –
  • Take one lady finger and soak it in the badam milk, remove and place it in the bowl or cup you plan to serve, add some rabdi about 2 tbsp, 2 tbsp whipped cream, then follow same pattern if you are doing two layers. Finally garnish it with pistachios, or almonds, dried rose petals, saffron strands, and edible silver.
  • I also added pipettes filled with leftover badam milk, so if you like you can do so too.

Notes

  • Add sugar to your liking. 
  • For rabdi – I have used ricotta but other things you can use. Paneer, White pedas, Khoya, milk powder, almond meal. etc.
